Prerequisite: Completion of Level 1: Basic,
or waiver.
Synopsis: Level 2 begins with customer service, and continues with career basics and purchasing. This workshop also explores nutrition. Culinary skill development will include meat, poultry and seafood; fruits and vegetables; potatoes and grains; and breakfast and sandwiches.

Registration for the Summer Institutes is $675 and includes:
- Five days of instruction

- Knife Kit (starter kit for Level I only)

Transportation, hotel, and additional meals are not covered by the Registration fee.
