ProStart Professional Development™

Culinary and Restaurant Management Skills for the Classroom

ProStart® Professional Development (ProStart PD) is the premier professional learning experience for ProStart educators nationwide. Designed to strengthen instructional practice and program implementation, ProStart PD supports educators in delivering high‑quality culinary arts and restaurant management instruction aligned to the Foundations of Restaurant Management and Culinary Arts (FRMCA) curriculum.

Launched in the summer of 2023, ProStart PD was developed to provide ProStart‑specific professional learning that supports educators not only in content delivery, but also in navigating the systems, processes, and classroom practices that directly impact student success and program quality.

2026 Update: Transition to Online Delivery

ProStart Professional Development is currently undergoing a strategic transition to an online delivery model, with the goal of expanding access, flexibility, and scalability for educators across the country. The fully online ProStart PD experience is anticipated to launch in Q4 of 2026.

As part of this transition period, there will be no in‑person programming offered in 2026. To ensure continued engagement and professional growth during this interim year, the Foundation is offering a Summer 2026 ProStart Professional Development webinar series.

This approach allows the organization to maintain momentum, support educators in the classroom, and continue best practice sharing while the online platform is finalized.

Creating Inclusive Menus: How Culinary Students Can Cook for Everyone

  • Rob Gresham, Founder, Isaac’s Poultry Market

Today’s diners bring a wide range of dietary needs, preferences, and expectations to the table. How can culinary educators prepare students to meet these needs while still delivering exceptional flavor?

Join Rob Gresham, owner of Isaac’s Poultry Market, for an inspiring and practical session on building truly inclusive menus that don’t compromise on taste. Guided by the belief that food should bring people together, Rob has developed a menu rooted in simplicity and integrity while remaining both accessible and crave-worthy.

Rob will share how he intentionally crafts recipes to minimize common allergens, eliminate cross-contamination, and prioritize guest safety at every step. Just as importantly, he will demonstrate that inclusive food can still be award-winning: his signature chicken sandwich earned “Best Sandwich” honors from the Restaurant Association of Maryland and placed in the Top 10 at the 2023 World Food Championships.

Educators will walk away with strategies to help students:

  • Think critically about allergens and dietary restrictions when developing recipes
  • Design menus that are both inclusive and delicious
  • Understand kitchen practices that prevent cross-contamination
  • Build transparency and trust with diners through clear communication
  • Embrace food as a tool for connection, hospitality, and community

This session will empower you to teach the next generation of culinary professionals how to create flavorful, inclusive dining experiences where every guest feels safe, welcome, and excited to eat.
